A feature of this honey is the speed of crystallization and thickening. It is in liquid form for a rather short time (up to 20 days). It is this fact that scares off many honey lovers and reduces the demand for it, and also explains its lower cost.
Its taste has no impurity, no harshness and is characterized by a pleasant fruity acidity, but after sugaring it acquires some bitterness. When crystallized, it melts quite easily in the mouth. The aroma of sunflower honey is unique and resembles the smell of fresh hay, ripe apricots, pollen. Such honey can be considered real if it is 51 percent made from pollen from flowering sunflowers.
