Natural bee honey is subject to a crystallization process. The candied product can have a coarse-grained, fine-grained or fat-like setting. The latter is just called: cream honey. Sometimes they say: whipped honey.
This product is popular with consumers for a number of reasons:
- The smaller the cage, the more fully the taste and aroma are revealed during tasting.
- The smallest crystals dissolve faster to a liquid state and have good contact with the taste buds in the mouth.
- Cream honey contains many tiny air bubbles, which, as it were, "preserve" the aroma. In the mouth, these bubbles burst and the smell gets through the nasopharynx to the olfactory receptors;
- Creamy honey, being soft and plastic, adheres well to a slice of bread or a roll;
- Such a product does not become hard during storage;
- It is easy to get it out of any container;
- It is convenient for them to use at the table;
- Unlike liquid mass, no drips remain on the dishes and drops on the table;
- During storage, cream honey does not exfoliate.
The crystallization process can be controlled. The sweet mass is a supersaturated solution of sugars. This means that there are more dissolved substances in it than can be contained at a temperature of 4-28 ° C. This state is unstable, and over time, an excess amount of matter falls out into a solid state.
Crystallization occurs around the so-called seed or seed crystals, which grow, attaching particles from solution to themselves. In a sweet product, such germ crystals are glucose crystals, plant pollen grains and mechanical impurities.
